Heat olive oil in a skillet over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until softened. Add minced garlic and cook for 1 more minute until fragrant. Remove from heat.

In the crock pot, combine the pumpkin puree, chicken broth, coconut milk, sautéed onion and garlic, ground cinnamon, nutmeg, ginger, salt, and black pepper. Stir well to mix.

After cooking, use an immersion blender to blend the soup until smooth and creamy, directly in the crock pot. Alternatively, transfer the soup in batches to a countertop blender and carefully blend until smooth before returning to the crock pot.
