The addition of Parmesan cheese and a delicate drizzle of olive oil elevates every bowl to gourmet status, while its smooth, blended texture makes it irresistibly rich and indulgent. Perfect as a comforting starter or a light main dish, this versatile soup is best served with warm, crusty bread or crunchy croutons for a complete meal. With simple ingredients and minimal prep, this broccoli soup is proof that elegant dining can be quick and fuss-free.
Prepare the broccoli by trimming the florets into smaller pieces. Rinse them under cold water and let them drain.
Finely chop the onion and mince the garlic cloves.
In a large pot, melt the butter over medium heat. Add the chopped onion and cook for 4-5 minutes, until softened and translucent.
Stir in the minced garlic and cook for an additional 1 minute, being careful not to burn it.
Add the broccoli florets to the pot and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes, or until the broccoli is very tender.
Use an immersion blender to puree the soup directly in the pot until smooth, or carefully transfer the soup to a blender and puree in batches. Return the soup to the pot if using a blender.
Stir in the heavy cream, salt, black pepper, and nutmeg. Cook over low heat for 3-5 minutes, just until heated through. Do not let it boil.
Taste and adjust seasonings as needed. If the soup is too thick, you can thin it with a bit more broth or water.
Ladle the soup into bowls and garnish each serving with a drizzle of olive oil and a sprinkle of grated Parmesan cheese.
Serve immediately with warm crusty bread or croutons, if desired.
