Trim the artichokes: Remove the tough outer leaves until you reach the tender, pale-green leaves. Using a sharp knife, slice off the top 1 inch and trim the stem to about 1 inch. Peel the stem if necessary, and cut the artichokes in half lengthwise. Scoop out the fuzzy choke using a spoon.

Rub each artichoke half with lemon to prevent browning. Cut the lemon in half, and reserve one half for juicing later.

In a large skillet or wide pot, heat the olive oil over medium heat. Once hot, add the garlic cloves and sauté for about 30 seconds until fragrant.

Arrange the artichoke halves cut side down in the skillet. Cook for 3–4 minutes until the cut sides are golden brown.

Pour in the chicken or vegetable broth, ensuring the liquid comes about halfway up the sides of the artichokes. Add the thyme sprigs, 1 teaspoon of salt, and 0.5 teaspoons of black pepper. Squeeze the juice from the reserved lemon half into the skillet.

Cover the skillet with a tight-fitting lid, reduce the heat to low, and let the artichokes braise for 30–35 minutes. Check occasionally to ensure the liquid hasn’t evaporated completely; add a splash of water or broth if needed.

Once the artichokes are tender (a knife should easily pierce the base), remove the lid and cook for another 2–3 minutes to slightly reduce the liquid.
