Separate the tops and bottoms of the mini chocolate sandwich cookies. Scrape off the cream filling from all cookie pieces and discard or set aside for another use.
Melt the chocolate chips in a microwave-safe bowl in 15-second intervals, stirring after each interval until smooth and fully melted.
Dip the flat end of a chocolate kiss into the melted chocolate and press it onto the flat side of a cookie piece, creating the acorn bottom. Repeat for all remaining cookies and kisses.
Break the pretzel sticks into small pieces, about 1/2 inch long. These will serve as the acorn stems.
Dip one end of each pretzel stick into the melted chocolate, then attach it to the center of the opposite flat side of the cookie pieces (opposite the chocolate kiss). Hold it in place for a few seconds to ensure it sticks well.
Place the completed acorns on a sheet of parchment paper or a plate. Allow them to set at room temperature or place them in the refrigerator for 5β10 minutes to fully harden.
Serve and enjoy your adorable and delicious Easy Acorns!
