Celebrate springtime with these adorable and delicious Easter Egg Baskets! This fun and festive dessert combines buttery sugar cookie dough shaped into mini baskets, complete with a colorful "grass" filling made from shredded coconut dyed green. Topped with candy-coated mini chocolate eggs, these treats are as delightful to look at as they are to eat. Perfect for Easter gatherings or a kid-friendly baking project, these edible baskets come together in just 20 minutes of prep time and bake to golden perfection in a muffin tin. Easy, creative, and irresistibly sweet, theyβre sure to be the highlight of your holiday dessert table!
Preheat your oven to 350Β°F (175Β°C) and lightly grease a 12-cup muffin tin with non-stick cooking spray.
Divide the sugar cookie dough into 12 equal pieces. Roll each piece into a ball and press it into the bottom and up the sides of each muffin cup to form baskets.
Bake the cookie baskets for 10-12 minutes, or until the edges are golden brown. Remove from the oven and use the back of a spoon to gently reshape the centers if they have puffed. Let them cool completely in the tin before removing.
While the cookie baskets are cooling, prepare the 'grass': Place the shredded coconut in a zip-top bag or small bowl and add the green food coloring. Mix until the coconut is evenly colored.
Once the cookie baskets are cool, remove them from the tin and fill each one with about a tablespoon of colored coconut.
Nestle three mini chocolate eggs on top of the coconut 'grass' in each basket to complete the look.
Serve immediately or store in an airtight container at room temperature for up to 3 days.
