In a small saucepan, heat 240ml of milk over medium heat until it’s warm but not boiling. Add 2 Earl Grey tea bags and steep for 10 minutes. Remove the tea bags, squeezing out excess liquid, and let the milk cool to lukewarm.

In the same saucepan, melt 75g of unsalted butter. Once melted, combine it with the lukewarm milk and set aside.

In a large mixing bowl, combine 50g of granulated sugar and 7g of active dry yeast. Pour in the warm milk mixture and stir gently. Allow it to sit for 5 minutes until frothy.

Add 2 large eggs, 400g of all-purpose flour, and 1 tsp of salt to the yeast mixture. Mix until a dough forms.

Knead the dough on a floured surface for approximately 8 minutes, or until smooth and elastic. Place the dough in a greased bowl, cover with a damp towel, and let it rise for 1 hour in a warm place until doubled in size.

While the dough rises, prepare the filling by combining 100g of light brown sugar, 2 tbsp of ground Earl Grey tea leaves, 1 tsp of cinnamon, and 2 tbsp of lime zest in a bowl.

Once the dough has risen, punch it down and roll it out into a 12x18 inch (30x45 cm) rectangle on a floured surface. Spread 50g of softened butter evenly over the dough, then sprinkle the prepared filling over the top.

Starting from the longer edge, tightly roll the dough into a log. Using a sharp knife or dental floss, slice the log into 12 equal pieces.

Arrange the rolls in a greased or parchment-lined 9x13 inch (23x33 cm) baking dish. Cover with a towel and let them rise for another 30 minutes.

Preheat your oven to 180Β°C (350Β°F). Bake the rolls for 20-25 minutes, or until golden brown.

While the rolls bake, prepare the glaze by whisking together 180g of powdered sugar, 2 tbsp of fresh lime juice, and 2 tbsp of heavy cream in a bowl until smooth.
