Preheat your oven to 325°F (160°C). Place a baking dish large enough to hold 4 ramekins in the oven and fill it halfway with hot water to create a water bath.

In a medium saucepan, heat the heavy cream over medium heat until it begins to steam, but do not let it boil.

Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the pod to the cream. Remove the cream from heat and cover; let it steep for 15 minutes to infuse the flavor.

In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture becomes thick and pale yellow.

Slowly pour the warm cream into the egg mixture, whisking constantly to prevent the eggs from curdling. Strain the mixture through a fine-mesh sieve to remove the vanilla pod and any cooked egg bits.

Divide the custard mixture evenly among 4 ramekins. Place the ramekins in the prepared water bath in the oven.
