Peel the potatoes and the onion. Grate them using the fine holes of a box grater or a food processor.
Place the grated potatoes and onion into a clean kitchen towel and squeeze out as much liquid as possible.
Transfer the drained potato and onion mixture to a large mixing bowl.
Add the egg, all-purpose flour, salt, and ground black pepper to the bowl. Mix well until fully combined into a batter.
Heat a large skillet over medium heat and add enough vegetable oil to lightly coat the pan.
Spoon about 2 tablespoons of the potato mixture into the skillet for each pancake, spreading it slightly to form a thin round shape. Repeat to fill the skillet, keeping the pancakes spaced apart.
