Rinse the dried yellow peas thoroughly under cold water and soak them in a large bowl of water for at least 6 hours or overnight.

Drain the soaked peas and set them aside.

In a large pot, add the smoked pork belly or ham hock and 1.5 liters of water. Bring to a gentle boil and skim off any foam that forms on the surface.

Add the drained yellow peas to the pot along with the bay leaf. Lower the heat to a simmer and let cook for about 90 minutes, stirring occasionally.
