Roll the lemons on a countertop to help release the juices, then slice them in half and juice them into a measuring cup. Youβll need 1/2 cup of fresh lemon juice, which is approximately the juice of 3 medium lemons.
Zest one of the lemons to get about 1 tablespoon of lemon zest. Set aside.
In a mixing bowl, whisk together the lemon juice, lemon zest, coconut milk, maple syrup, vanilla extract, and water until smooth and fully combined.
Taste the mixture and adjust sweetness by adding a little more maple syrup, if desired.
Carefully pour the mixture into popsicle molds, leaving a small amount of space at the top to allow for expansion when freezing.
Insert popsicle sticks into the molds. If the sticks donβt stay centered, cover the molds with foil and poke the sticks through the foil to secure them in place.
Place the molds in the freezer and freeze for at least 6 hours, or until the popsicles are fully set.
To release the popsicles from the molds, run the molds under warm water for 10β15 seconds to loosen them, then gently remove the popsicles.
Serve immediately or store in an airtight container in the freezer for up to 2 weeks.
