The tart is finished with an optional apricot glaze for an elegant, glossy appearance that elevates its visual appeal. Perfect for those seeking a dairy-free dessert option, this easy-to-make masterpiece combines wholesome simplicity with show-stopping presentation. Whether served warm with a scoop of dairy-free ice cream or enjoyed on its own, this tart is sure to impress at any gathering.
In a large mixing bowl, combine the all-purpose flour and salt.
Add the solid coconut oil to the flour mixture, cutting it in with a pastry cutter or two knives until the mixture resembles coarse crumbs.
Gradually add the cold water, one tablespoon at a time, mixing gently with a fork until the dough comes together. Be careful not to overwork the dough.
Form the dough into a disk, wrap it in plastic wrap, and refrigerate for 20 minutes.
Preheat your oven to 190°C (375°F).
Peel, core, and thinly slice the apples into even slices, about 2-3 mm thick. Toss the apple slices in a bowl with the lemon juice, 2 tablespoons of the maple syrup, and cinnamon. Set aside.
On a lightly floured surface, roll the chilled dough into a circle roughly 30 cm (12 inches) in diameter. Gently transfer the rolled-out dough to a tart pan, pressing it into the edges and trimming any excess.
Arrange the apple slices in a fan-like pattern over the crust, starting at the outer edge and working your way inward.
Drizzle the remaining 1 tablespoon of maple syrup over the top of the apples.
Bake the tart in the preheated oven for 35-40 minutes, or until the crust is golden brown and the apples are tender.
Optional: While the tart is baking, heat the apricot jam with 1 teaspoon of water (if needed) in a small saucepan until melted and smooth. Once the tart is finished baking, brush the apricot glaze over the apples for a glossy finish.
Allow the tart to cool for at least 15 minutes before slicing and serving. Enjoy!
