πŸ“ Instructions

10 steps
1

Grease a large flat plate or pan with coconut oil and set it aside to use for setting the Soan Papdi.

2

In a heavy-bottomed pan, heat the coconut oil on medium heat. Once melted, add the chickpea flour and all-purpose flour.

3

Stir continuously to roast the flours evenly until you get a nutty aroma and they change to a light brown color. This should take about 10 to 15 minutes. Remove from heat when done.

4

In a separate pan, combine water and sugar. Bring to a boil on medium-high heat, stirring occasionally until the sugar is dissolved and the syrup reaches 2-thread consistency (about 240Β°F on a candy thermometer).

5

Once the syrup is ready, slowly pour it into the roasted flour mixture, stirring continuously.

6

Add cardamom powder and continue to mix until it becomes a smooth, lump-free mixture.

7

Quickly transfer the hot mixture to the greased plate. Spread it evenly with a spatula or spoon.

8

While the mixture is still warm, generously sprinkle chopped pistachios and almonds over the top and gently press them in with a spatula.

9

Allow the Soan Papdi to cool until it sets. Once cool, cut into squares or diamond shapes using a sharp knife.

10

Gently separate the pieces and store them in an airtight container.
