πŸ“ Instructions

14 steps
1

Soak the black-eyed peas in water for at least 30 minutes to loosen the skins.

2

Rub the soaked beans between your palms to remove the skins, rinse thoroughly until all skins are removed.

3

Drain the beans and pour them into a blender.

4

Add red bell peppers, tomatoes, onion, and Scotch bonnet pepper into the blender with the beans.

5

Add half of the water and blend into a smooth batter. Add more water if necessary to achieve a slightly thick batter consistency.

6

Pour the blended mixture into a large mixing bowl.

7

Stir in vegetable oil, salt, smoked paprika, and ground crayfish, mixing until well incorporated.

8

Prepare your steaming vessel (a pot with a steamer basket or a traditional Moimoi pot) by adding enough water to create steam but not so much that it touches the Moimoi containers. Bring it to a boil.

9

Cut banana leaves into rectangular pieces and rinse them with hot water, or prepare squares of aluminum foil.

10

Scoop the batter onto the leaf pieces or foil, fold carefully but tightly to create small packets.

11

Place the packets in the steamer basket, leaving a little space in between them.

12

Cover and steam for approximately 45 to 60 minutes until set and firm to the touch.

13

Remove from heat, let them cool slightly, then serve warm.

14

Enjoy the Dairy-Free Moimoi as a standalone dish or as part of a meal with rice, bread, or pap.
