πŸ“ Instructions

12 steps
1

Start by preparing the Kaya filling. In a saucepan, add coconut milk, brown sugar, and pandan leaves. Heat over medium heat until the sugar dissolves completely and the mixture is warm. Remove from heat.

2

In a bowl, whisk the egg yolks and slowly add the warm coconut milk mixture, stirring constantly to avoid curdling.

3

Return the mixture to the saucepan, remove pandan leaves, and cook over low heat, stirring constantly until it thickens.

4

Mix cornstarch with cold water to make a slurry, then add it to the saucepan. Continue stirring until the Kaya thickens more. Set aside to cool.

5

For the pastry, mix all-purpose flour and salt in a bowl. Add vegetable oil and mix until a crumbly dough is formed.

6

Gradually add cold water to the flour mix, kneading until a soft dough forms. Wrap in cling film and chill in the refrigerator for 15 minutes.

7

Preheat the oven to 180Β°C (350Β°F) and line a baking sheet with parchment paper.

8

After chilling, divide the dough into 12 equal pieces. Roll each piece into a circle about 3 inches in diameter.

9

Place a spoonful of cooled Kaya jam in the center of each dough circle. Fold the dough over to create a semi-circle and press the edges with a fork to seal.

10

Arrange the puffs on the prepared baking sheet. If desired, brush the tops with an egg wash or a mix of coconut milk and water for a glaze.

11

Bake for 20-25 minutes or until golden brown.

12

Allow to cool slightly before serving. Enjoy your dairy-free Kaya Puffs!
