In a small bowl, mix the chia seeds with the water and let sit for 10 minutes until it forms a gel-like consistency (this is your chia egg).
In a small saucepan, warm the almond milk until lukewarm. Remove from heat and dissolve the sugar in the almond milk. Sprinkle the yeast over the top and let it sit for about 5 minutes to foam.
