In a large bowl, combine the flour, instant yeast, warm water, olive oil, and salt to form a smooth dough.
Knead the dough for about 10 minutes until it is elastic and smooth. Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 30 minutes.
While the dough is rising, preheat your oven to 220Β°C (428Β°F). If you have a pizza stone, place it in the oven to heat.
In a separate bowl, mix together the dairy-free yogurt and dairy-free sour cream. Add a pinch of nutmeg, black pepper, and salt to taste. Stir until smooth and set aside.
After the dough has risen, divide it into two equal portions. Roll each portion out on a floured surface into thin rounds or rectangles about 3mm thick.
Transfer the rolled-out dough to a piece of parchment paper (to easily slide onto a pizza stone later if using).
Spread the yogurt and sour cream mixture evenly over each dough base, leaving a 1cm border around the edges.
Evenly distribute the thinly sliced shallots and small diced smoked tofu over the top of the base.
Carefully slide the parchment paper with the flammkuchen onto the preheated pizza stone or place directly onto a baking sheet if not using a stone.
Bake in the preheated oven for 12-15 minutes or until the edges are golden and crispy.
Remove from the oven and sprinkle the chopped chives over the top of the baked flammkuchen.
Cut into pieces and serve immediately.
