In a large bowl, combine the sprouted whole wheat flour, sprouted barley flour, sprouted millet flour, sprouted lentil flour, and sprouted spelt flour. Set aside.
In a separate small bowl, dissolve the yeast in warm water. Let it sit for about 5-10 minutes until it becomes foamy.
Once the yeast is activated, add the coconut oil and honey to the yeast mixture and stir until combined.
Pour the wet ingredients into the dry ingredients and mix well until a dough begins to form.
Add the salt, ground cinnamon, and raisins to the dough. Mix until all ingredients are well incorporated.
Turn the dough out onto a floured surface and knead for about 10 minutes, or until smooth and elastic.
Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 45 minutes to an hour, or until doubled in size.
Preheat your oven to 180Β°C (350Β°F).
After the dough has risen, punch it down to release excess air and shape it into a loaf.
Place the shaped dough in a lightly greased loaf pan. Cover it again and let it rise for another 20 minutes.
Bake the bread in the preheated oven for 30-35 minutes, or until the top is golden brown and the bread sounds hollow when tapped on the bottom.
Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.
