Preheat the oven to 200°C (392°F) and line a baking tray with parchment paper.

Finely chop the onion and garlic.

Heat olive oil in a small pan over medium heat. Add the chopped onion and garlic; sauté for 3-4 minutes until they become translucent. Allow to cool slightly.

In a large bowl, squeeze the sausage meat out of the casings.
