Heat the olive oil in a large pot over medium heat.
Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 5 minutes.
Add the broccoli florets to the pot and stir to combine with the onion and garlic.
Pour in the vegetable broth and bring to a simmer. Cover the pot and let it cook for about 15 minutes, or until the broccoli is tender.
Remove the pot from the heat and use an immersion blender to puree the soup until smooth. If you do not have an immersion blender, allow the soup to cool slightly and blend in batches using a countertop blender.
Return the pot to the stove over low heat and stir in the almond milk.
Add the vegan blue cheese, salt, black pepper, and nutritional yeast. Stir until the cheese has melted and the soup is uniformly creamy.
Taste and adjust seasoning if necessary. Let the soup heat through for another 5 minutes, stirring occasionally.
