Ready in under an hour, this vegan recipe is sure to impress at your next family gathering or festive celebration!
In a large mixing bowl, combine the all-purpose flour, semolina, baking powder, baking soda, and salt. Mix well to ensure even distribution of the leavening agents and salt.
Add the non-dairy yogurt and 2 tablespoons of oil to the flour mixture. Start mixing gently with your hands or a spatula.
Gradually add the warm water while kneading the dough with your hands. The water is only a guide, so add slowly until the dough starts coming together. You are aiming for a soft, smooth dough.
Once the dough is formed, cover it with a damp cloth and let it rest for approximately 1-2 hours. This resting time helps the dough to slightly ferment and results in fluffier bhature.
After resting, divide the dough into 8 equal portions. Roll each portion into a smooth ball.
On a slightly floured surface, use a rolling pin to roll each dough ball into a circle of approximately 6 inches in diameter. Make sure they are even and of medium thickness.
In a deep frying pan or kadai, heat enough oil for deep frying. The oil should be hot but not smoking. You can test this by dropping a small piece of dough into the oil; it should rise to the surface gradually.
Once the oil is ready, gently slide one rolled bhatura into the oil. It will initially sink and then puff up. Press gently with a slotted spoon to help it puff completely.
Fry the bhatura until it is golden brown, then flip it over and cook the other side. Each bhatura should take about 1 minute per side.
Remove the puffed bhatura from the oil using a slotted spoon and drain excess oil on a kitchen paper towel.
Repeat the process with the remaining dough balls.
Serve hot with chole or your favorite curry for a delicious meal.
