Drain and press the tofu to remove excess moisture. Cut it into small cubes.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the tofu cubes and cook for 7–8 minutes, turning occasionally, until golden brown. Remove the tofu from the skillet and set aside.
In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for 3–4 minutes until softened.

Fold in the sides of the tortilla and roll it up to form a burrito. Repeat with the remaining tortillas and filling.
