Pat the beef chuck roast dry with paper towels. Season all sides with 1 teaspoon of salt and 1 teaspoon of black pepper.

Once the cooking time is complete, remove the beef and vegetables from the crock pot and transfer them to a serving platter. Cover with foil to keep warm.

To make the gravy, strain the liquid from the crock pot into a saucepan. In a small bowl, mix the cornstarch and water to create a slurry. Bring the saucepan to a simmer over medium heat and slowly whisk in the slurry. Cook for 2-3 minutes, or until the gravy thickens.
