📝 Instructions

9 steps
1

Heat a dry skillet over medium heat. Toast the dried chiles in batches for 30-60 seconds on each side until fragrant, being careful not to burn them.

2

Transfer the toasted chiles to a large bowl and pour 3 cups of hot water over them. Let them soak for 20 minutes until softened.

3

In a blender, combine the soaked chiles (reserve the soaking liquid), minced garlic, diced onion, cumin, oregano, smoked paprika, salt, apple cider vinegar, and 1 cup of the chile soaking liquid. Blend until smooth.

4

Optional: Strain the blended chile sauce through a fine mesh sieve for a smoother consistency.

5

Heat 1 tablespoon of oil in a large skillet over medium-high heat. Sear the pork cubes in batches until browned on all sides. Transfer the pork to the crock pot.

6

Pour the chile sauce over the pork in the crock pot. Add the chicken broth, stirring to thoroughly coat the pork in the sauce.

7

Cover and cook on low for 7 hours, or until the pork is tender and easily shreds with a fork.

8

Taste and adjust seasoning with additional salt or vinegar, if needed, before serving.

9

Serve your Carne Adovada with warm flour or corn tortillas, or over rice for a hearty meal.
