Prepare the cabbage: Remove any damaged outer leaves from the cabbage. Core it, and place the whole head in a large pot of boiling water for 5–7 minutes to soften. Once softened, carefully peel off the large outer leaves and set them aside. Repeat until you have at least 12 large cabbage leaves.

Chop the remaining inner portion of the cabbage into small pieces to use in the soup base.

In a large mixing bowl, combine the ground beef, ground pork, uncooked rice, minced onion, minced garlic, paprika, and a pinch of salt and pepper. Mix thoroughly.

Place a heaping tablespoon of the meat mixture onto each cabbage leaf. Roll tightly, folding in the sides as you go, to form a stuffed cabbage roll. Set aside.

Heat the olive oil in a large soup pot over medium heat. Add the chopped onion and cook for 3–4 minutes, until softened and translucent.

Stir in the garlic, paprika, and tomato paste. Cook for another 1–2 minutes, stirring frequently, until fragrant.

Add the chopped cabbage, sauerkraut, sliced carrots, diced potatoes, and bay leaves to the pot. Pour in the vegetable broth and bring to a simmer.

Carefully arrange the cabbage rolls on top of the vegetable mixture in the pot. Add enough water to ensure the rolls are mostly submerged.

Cover the pot and simmer over low heat for about 1.5 hours, until the cabbage rolls are cooked through and the flavors have melded together.

Taste the soup and adjust seasoning with additional salt and black pepper, if needed.
