Rinse the butterflied bangus under cold water and pat dry with paper towels.

In a medium-sized bowl, combine vinegar, 1 teaspoon of salt, and minced garlic. Stir well to dissolve the salt.

Place the bangus in a shallow dish skin side up and pour the vinegar-garlic mixture over the fish. Ensure the entire fish is coated. Cover and marinate for at least 1 hour in the refrigerator, turning the fish occasionally.

After marinating, remove the bangus from the marinade and pat dry with paper towels. Discard marinade.

Sprinkle the remaining 1 teaspoon of salt and ground black pepper evenly on both sides of the bangus.

Heat the cooking oil in a large frying pan over medium-high heat. Ensure there is enough oil to submerge at least half of the thickness of the fish.

Once the oil is hot, carefully place one piece of bangus in the pan, skin side down. Fry for about 6-7 minutes or until the skin is golden brown and crispy.

Using a spatula, carefully flip the bangus and fry the other side for another 6-7 minutes or until golden brown.

Remove the fried bangus from the pan and place on a plate lined with paper towels to drain excess oil.

Repeat the frying process for the second piece of bangus.
