In a large mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract together until smooth and combined.

Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to firm up.

Melt the white chocolate chips with 1 teaspoon of coconut oil in a microwave-safe bowl, heating in 30-second increments and stirring in between until fully melted and smooth.

Dip each cream cheese ball into the melted white chocolate, using a fork to lift and let the excess chocolate drip off. Place the coated balls back onto the parchment paper.

Before the white chocolate hardens, use a small drop of blue or green food coloring to create the iris in the center of each ball. Use a toothpick to spread the color into a circle shape.
