πŸ“ Instructions

9 steps
1

In a large mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract together until smooth and combined.

2

Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to firm up.

3

Melt the white chocolate chips with 1 teaspoon of coconut oil in a microwave-safe bowl, heating in 30-second increments and stirring in between until fully melted and smooth.

4

Dip each cream cheese ball into the melted white chocolate, using a fork to lift and let the excess chocolate drip off. Place the coated balls back onto the parchment paper.

5

Before the white chocolate hardens, use a small drop of blue or green food coloring to create the iris in the center of each ball. Use a toothpick to spread the color into a circle shape.

6

Add a tiny dot of edible black gel or melted black candy in the center of the iris to create the pupil.

7

Melt the semi-sweet chocolate chips with the remaining 1 teaspoon of coconut oil following the same method as before. Dip a toothpick into the melted chocolate and carefully draw thin red veins radiating out from the iris toward the edges to make the eyes look bloodshot.

8

Let the eyeballs set at room temperature or place them in the fridge for 15 minutes until the chocolate is completely hardened.

9

Serve chilled or store in an airtight container in the refrigerator until ready to serve.
