📝 Instructions

10 steps
1

Bring 4 quarts of water to a boil in a large pot. Add 1 tsp of salt and 1 tbsp of olive oil.

2

Cook the noodles in the boiling water according to the package instructions until al dente, then drain and set aside, reserving 1 cup of pasta water.

3

In a large skillet over medium heat, cook the diced bacon until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside on a plate lined with paper towels.

4

Drain excess bacon grease from the skillet, leaving about 1 tbsp behind.

5

Add 2 tbsp of unsalted butter to the skillet, followed by the minced garlic. Sauté the garlic for 1-2 minutes until fragrant but not browned.

6

Pour 1 cup of heavy cream into the skillet and stir. Let it simmer for 2-3 minutes, allowing it to slightly thicken.

7

Stir in 3 oz of grated Parmesan cheese until melted and incorporated into the cream sauce.

8

Return the cooked noodles and crispy bacon to the skillet, tossing them gently to coat in the sauce. If the sauce is too thick, add the reserved pasta water a tablespoon at a time until the desired consistency is reached.

9

Season with 0.5 tsp of black pepper and adjust salt to taste.

10

Serve immediately, garnished with fresh parsley if desired.
