A balance of earthy black pepper and just the right amount of salt highlights the natural flavors of the russet potatoes and green cabbage. Ready in just 45 minutes, this simple yet indulgent recipe is ideal for festive holiday dinners or weeknight meals when you’re craving cozy, hearty flavors. Serve it warm alongside roasted meats or enjoy it on its own—it’s comfort food at its finest!
Peel and chop the potatoes into uniform chunks.
Place the potatoes in a large pot and cover with cold water. Add 1 teaspoon of salt to the pot.
Bring the pot to a boil over medium-high heat, then reduce to a simmer. Cook for 15-20 minutes, or until the potatoes are fork-tender.
While the potatoes are cooking, finely shred the green cabbage and set it aside.
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the shredded cabbage and sauté for 5-7 minutes, or until softened. Set the cooked cabbage aside.
Once the potatoes are cooked, drain them and return them to the pot.
Add the remaining 2 tablespoons of butter, milk, and cream cheese to the potatoes. Mash until smooth and creamy.
Fold the cooked cabbage into the mashed potatoes until evenly distributed.
Chop the green onions and stir them into the mixture. Add black pepper and the remaining 1 teaspoon of salt, adjusting to taste.
Serve the Cream Cheese Colcannon warm as a hearty side dish.
