In a medium-sized saucepan, combine the cranberries, sugar, and water. If using a vanilla bean, split it lengthwise and scrape the seeds into the saucepan. Add the bean pod as well. If using vanilla extract, add it later in the process.

Bring the mixture to a simmer over medium heat. Cook for 10-15 minutes, or until the cranberries have burst and softened.

Remove the saucepan from the heat and let it cool slightly. If you used a vanilla bean, remove and discard the pod.

Using a blender or an immersion blender, puree the cranberry mixture until smooth.

Strain the puree through a fine-mesh sieve into a large bowl, pressing with a spatula or spoon to extract all the liquid. Discard the solids.

Stir in the lemon juice. If using vanilla extract, add it at this point and mix well.
