1. Soak the salted cod in cold water for 24 to 48 hours, changing the water 2–3 times a day to remove the excess salt. Drain and pat dry.

3. In a medium pot, boil the potatoes (with skins on) until just tender, about 15 minutes. Cool slightly, peel, and slice into 1/4-inch rounds. Set aside.
