📝 Instructions

10 steps
1

Line an 8x8-inch (20x20 cm) square baking pan with parchment paper, leaving some overhang for easy removal later.

2

In a large mixing bowl, combine the desiccated coconut, sweetened condensed milk, powdered sugar, and vanilla extract. Stir well until everything is thoroughly combined to form a thick, sticky mixture.

3

Divide the mixture evenly into two bowls.

4

Leave one half of the mixture plain and set it aside. In the other bowl, add 4 drops of pink food coloring. Mix well until the color is evenly distributed.

5

Press the plain (white) coconut mixture evenly into the bottom of the prepared pan, using the back of a spoon or your fingers to flatten and smooth the surface.

6

Next, press the pink coconut mixture on top of the white layer, spreading and smoothing it out evenly.

7

Place the pan in the refrigerator and chill for at least 2 hours, or until firm.

8

Once set, use the parchment paper overhang to lift the coconut ice slice out of the pan.

9

Cut into 16 squares or rectangles using a sharp knife. Wipe the knife clean between each cut for neat edges.

10

Store the coconut ice slices in an airtight container in the refrigerator for up to 1 week.
