πŸ“ Instructions

9 steps
1

Preheat your oven to 180Β°C (350Β°F) and line a baking tray with parchment paper.

2

In a large saucepan, combine the granulated sugar and water over medium heat. Stir until the sugar is fully dissolved, forming a clear syrup.

3

Add the shredded coconut, sweetened condensed milk, vanilla extract, and salt to the syrup and stir well to combine all the ingredients.

4

Continue to cook the mixture over medium heat, stirring constantly to prevent it from sticking to the bottom of the saucepan. Cook until the mixture thickens and starts to pull away from the sides, about 10-15 minutes.

5

Remove the saucepan from heat and stir in the butter, mixing until it’s completely melted and incorporated.

6

Using a spoon or a cookie scoop, drop spoonfuls of the coconut mixture onto the prepared baking tray, spacing them about an inch apart.

7

Place the tray in the oven and bake for 10-12 minutes or until the edges of the cocadas begin to turn golden brown.

8

Remove the tray from the oven and allow the cocadas to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.

9

Once cooled, serve the cocadas at room temperature. They can be stored in an airtight container for up to a week.
