Preheat your oven to 325°F (160°C) and prepare a 9-inch round baking dish.

In a small saucepan, combine the honey and granulated sugar over medium heat. Stir until the sugar dissolves.

Add 50 ml of water to the pan and cook without stirring, allowing the mixture to bubble until it turns a deep amber color (approximately 6-8 minutes).

Carefully pour the caramelized honey evenly into the bottom of the prepared baking dish, swirling to coat the base. Set aside to cool and harden slightly.

In a large mixing bowl, whisk together the eggs and vanilla extract.

In a separate saucepan over medium heat, combine the whole milk, heavy cream, and salt. Heat until small bubbles form around the edges but do not bring to a boil.
