Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the all-purpose flour, baking powder, and salt; set aside.
In a large bowl, combine granulated sugar and butter. Beat with an electric mixer on medium speed until light and fluffy, about 3 minutes.
Add eggs one at a time, beating well after each addition. Mix in the vanilla and almond extracts.
Gradually add the dry ingredients to the wet mixture, beating just until combined.
With a spatula, fold in the chopped almonds until evenly distributed.
Turn the dough out onto a lightly floured surface. Divide in half and shape each portion into a log about 30 cm (12 inches) long.
Place the logs on the prepared baking sheet, spaced about 7.5 cm (3 inches) apart.
Press down gently on the tops to flatten them slightly.
Bake in the preheated oven for 25-30 minutes or until lightly golden and firm to the touch.
Remove from the oven and let them cool on the sheet for 10 minutes.
Reduce the oven temperature to 150°C (300°F).
Transfer the logs to a cutting board. Using a sharp serrated knife, slice diagonally into 1 cm (1/2 inch) thick slices.
Arrange the slices, cut sides down, on the baking sheet.
Return to the oven and bake for an additional 15-20 minutes, turning once halfway through, until golden brown and dry.
Remove from the oven and transfer to a wire rack to cool completely before serving or storing in an airtight container.
