Preheat the oven to 375°F (190°C).
Pat the chicken thighs dry with a paper towel and season both sides with salt and black pepper.
Heat 1 tablespoon of olive oil in a large, oven-safe skillet over medium-high heat.
Place the chicken thighs skin-side down in the skillet and sear for 4-5 minutes until the skin is golden brown and crispy. Flip the thighs and sear on the other side for 2 minutes. Remove the chicken from the skillet and set aside.
