📝 Instructions

10 steps
1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.

2

Add the diced onion and cook, stirring occasionally, until translucent, about 3-4 minutes. Add the minced garlic and cook for 1 minute until fragrant.

3

Add the beef stew meat to the pot. Sear on all sides until browned, about 5 minutes.

4

Sprinkle the flour over the beef and stir well to coat. Cook for another 2 minutes to remove the raw flour taste.

5

Pour in the beef broth and crushed tomatoes, stirring to deglaze the bottom of the pot and combine all ingredients.

6

Add the carrots, celery, potatoes, bay leaves, thyme, salt, and black pepper to the pot. Stir to combine.

7

Bring the mixture to a boil, then reduce the heat to low. Cover with a lid and let it simmer for 75 minutes, stirring occasionally.

8

After 75 minutes, remove the lid and stir in the frozen peas. Cook uncovered for an additional 5 minutes.

9

Remove the bay leaves. Taste and adjust seasoning with more salt or pepper if necessary.

10

Serve hot in bowls with crusty bread on the side for dipping. Enjoy!
