📝 Instructions

11 steps
1

Preheat your oven to 200°C (400°F) and lightly grease a large baking dish.

2

Wash and halve the baby potatoes. If using larger potatoes, cut them into bite-sized pieces.

3

Thinly slice the red and yellow bell peppers, peel and slice the red onion into wedges, and mince the garlic cloves.

4

In a large bowl, combine the halved potatoes, bell peppers, red onion, and minced garlic. Add olive oil, smoked paprika, oregano, salt, and black pepper. Toss everything together until well coated.

5

Spread the vegetable mixture evenly in the prepared baking dish and roast in the oven for 20 minutes.

6

While the vegetables are roasting, slice the chorizo sausage into 1 cm thick rounds.

7

After 20 minutes, remove the baking dish from the oven and add the sliced chorizo and whole cherry tomatoes to the roasted vegetables. Toss gently to combine.

8

Return the baking dish to the oven and bake for an additional 15 minutes, or until the potatoes are tender and the chorizo is slightly crisp around the edges.

9

Sprinkle the grated mozzarella cheese evenly over the top of the bake and return to the oven for 5 more minutes, or until the cheese is melted and bubbly.

10

Remove from the oven, garnish with freshly chopped parsley, and let cool for a few minutes before serving.

11

Serve warm and enjoy your delicious Chorizo Bake!
