Preheat your oven to 200°C (400°F) and lightly grease a large baking dish.
Wash and halve the baby potatoes. If using larger potatoes, cut them into bite-sized pieces.
Thinly slice the red and yellow bell peppers, peel and slice the red onion into wedges, and mince the garlic cloves.
In a large bowl, combine the halved potatoes, bell peppers, red onion, and minced garlic. Add olive oil, smoked paprika, oregano, salt, and black pepper. Toss everything together until well coated.
