📝 Instructions

10 steps
1

Preheat your oven to 170°C (350°F). Grease and line the bottom of a 9-inch (23 cm) round cake pan with parchment paper.

2

Chop the dark chocolate into small pieces and melt it in a heatproof bowl over a pot of simmering water (double boiler method) or in the microwave in 15-second increments, stirring often. Set aside to cool slightly.

3

In a separate saucepan, melt the butter over low heat and allow it to cool slightly before mixing it into the melted chocolate. Stir well to combine.

4

In a large mixing bowl, whisk together the granulated sugar and egg yolks until the mixture becomes pale and creamy. Add the cooled chocolate-butter mixture, vanilla extract, and salt. Mix thoroughly.

5

Fold in the ground almonds (almond flour) gently until just combined to maintain the airiness of the batter.

6

In a clean, dry bowl, whisk the egg whites until they form stiff peaks. Gently fold the egg whites into the chocolate batter in three additions, being careful not to deflate the mixture.

7

Pour the batter into the prepared cake pan and smooth the surface with a spatula.

8

Bake in the preheated oven for 40–45 minutes, or until the top has set and a toothpick inserted into the center comes out with a few moist crumbs.

9

Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

10

Once cooled, dust the top with powdered sugar before serving. Slice and enjoy!
