Make the ganache topping: In a small saucepan, heat the remaining 200 ml of heavy cream until it just begins to simmer. Remove from heat and pour it over 100 grams of dark chocolate, letting it sit for 2 minutes. Stir until smooth and glossy. Allow the ganache to cool slightly before pouring it over the set mousse layer.
