📝 Instructions

8 steps
1

Place the Choc Ripple biscuits into a food processor and pulse until finely crushed. Alternatively, place the biscuits into a sealed zip-lock bag and crush them with a rolling pin.

2

Transfer the crushed biscuits to a mixing bowl and combine with melted butter. Mix until the texture resembles wet sand.

3

Press the biscuit mixture evenly into the base and up the sides of a 22cm (9-inch) tart tin base with a removable bottom. Place the crust in the refrigerator to chill for at least 20 minutes.

4

In a medium saucepan, combine sweetened condensed milk, golden syrup, brown sugar, and unsalted butter (50 grams). Heat the mixture over medium heat, stirring continuously for 5-7 minutes or until it thickens and turns a caramel color.

5

Remove the caramel filling from the heat and allow it to cool slightly before pouring it into the prepared tart crust. Smooth the surface with a spatula. Refrigerate for at least 2 hours or until the caramel is set.

6

Once the caramel layer has set, whip the thickened cream until soft peaks form. Spread the whipped cream evenly over the tart.

7

If desired, sprinkle dark chocolate shavings on top for garnish.

8

Serve chilled and enjoy! Store any leftovers covered in the refrigerator for up to 3 days.
