Preheat your oven to 225°F (110°C). Line two baking sheets with parchment paper or silicone baking mats.

In a clean, large mixing bowl, add the egg whites and a pinch of salt. Using an electric mixer with a whisk attachment, beat the egg whites on medium speed until foamy.

Add the cream of tartar to the egg whites and continue beating on medium speed until soft peaks form.
