Cut the chicken breast into bite-sized pieces.

In a bowl, whisk together the egg, and enough cornstarch (approximately 150g) to create a thick batter. Add the chicken pieces and mix until they're evenly coated.

Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken pieces in batches, frying them until they're golden brown and cooked through, about 5 minutes per side. Remove and set aside on a paper towel-lined plate to drain excess oil.

In a small saucepan, combine the orange juice, soy sauce, rice vinegar, sugar, ginger, and garlic. Heat over medium heat, stirring occasionally until the sugar has dissolved.
