Preheat your oven to 200°C (400°F).
Peel the onions and remove the top 1cm of each one. Hollow out the centers using a spoon, leaving enough layers to create a sturdy bowl. Reserve the scooped onion flesh for later.
Bring a pot of salted water to a boil. Blanch the hollowed onions for 5 minutes, then carefully remove and place them in a greased baking dish.
Finely chop the reserved onion flesh and set aside.
Heat olive oil in a skillet over medium heat. Add the chopped onion flesh and cook until softened, about 2-3 minutes.
Dice the red bell pepper and add it to the skillet. Cook for another 3 minutes.
Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon, about 5 minutes.
Stir in the chilli powder, cumin, paprika, salt, and black pepper. Mix well to coat the beef and vegetables in the spices.
Add the crushed tomatoes and cooked black beans to the skillet. Simmer the mixture for 10 minutes, stirring occasionally.
Spoon the chilli mixture into the hollowed onions, packing it tightly.
Sprinkle the grated cheddar cheese evenly over the stuffed onions.
Bake in the preheated oven for 30 minutes, or until the onions are tender and the cheese is melted and golden.
Remove from the oven and garnish with freshly chopped parsley before serving.
Serve warm, either as a main dish or alongside a fresh salad or crusty bread.
