Season the chicken breasts with salt and black pepper on both sides.
Lightly dredge the chicken in the flour, shaking off any excess. Set aside.
Heat the olive oil and 1 tablespoon of butter in a large skillet over medium heat.
Add the chicken breasts and sear for 3-4 minutes per side until golden brown. Remove chicken from the skillet and set aside (it will not be fully cooked at this stage).
