📝 Instructions

14 steps
1

Preheat your oven to 375°F (190°C).

2

Pat the chicken thighs dry with paper towels and season generously with salt and black pepper.

3

Dredge the chicken thighs lightly in the flour, shaking off any excess.

4

In a large oven-safe skillet or braising pan, heat the olive oil over medium-high heat. Sear the chicken thighs skin-side down until golden brown, about 5–6 minutes. Flip and cook for another 2–3 minutes. Remove the chicken and set aside.

5

In the same pan, add the Italian sausage links and cook until browned on all sides, about 6–8 minutes. Remove and slice into 1-inch pieces.

6

Lower the heat to medium and add the butter to the pan. Once melted, add the minced garlic and cook until fragrant, about 1 minute.

7

Add the red and yellow bell peppers as well as the sliced mushrooms. Cook for 5–6 minutes, stirring occasionally, until slightly softened.

8

Pour in the white wine and scrape up any browned bits from the bottom of the pan. Let the wine reduce by half, about 2–3 minutes.

9

Add the chicken stock and red wine vinegar to the pan, stirring to combine.

10

Return the seared chicken thighs and sliced sausage to the pan. Sprinkle with the chopped rosemary and oregano.

11

Bring the liquid to a simmer, then transfer the skillet to the preheated oven.

12

Bake uncovered for 30 minutes, or until the chicken is cooked through and the sauce has thickened slightly.

13

Remove from the oven, taste, and adjust seasoning with additional salt and pepper if needed.

14

Serve hot, optionally garnished with fresh herbs and alongside crusty bread or roasted potatoes.
