Start by cooking the chicken. Heat the olive oil in a skillet over medium heat. Add the chicken breast and cook for 6-7 minutes on each side, or until fully cooked through. Season with soy sauce and transfer the chicken to a cutting board to rest.
While the chicken is cooking, bring the water to a boil in a small saucepan. Add the rice vermicelli noodles and cook according to package instructions, typically about 3-5 minutes. Drain and rinse under cold water to stop the cooking process.
