📝 Instructions

13 steps
1

Begin by slicing the chicken breast into thin strips. Set aside.

2

Peel and chop the garlic, onion, and ginger finely.

3

In a large skillet, heat the vegetable oil over medium heat.

4

Add the garlic, onion, and ginger to the skillet. Sauté for about 2-3 minutes or until the onions are translucent.

5

Add the chicken strips to the skillet and cook them until they are no longer pink, about 5-7 minutes.

6

Pour the coconut milk and soy sauce into the skillet with the chicken. Stir well to combine.

7

Season the mixture with salt and black pepper. Let it simmer, stirring occasionally, for about 8-10 minutes or until the sauce is slightly thickened and the chicken is cooked through.

8

While the chicken is cooking, lightly wipe the banana leaves with a damp cloth to clean them. Pass them over a low flame (or heat them in a pan) briefly to make them more pliable.

9

To assemble the pastil, place a portion of cooked white rice onto the center of a banana leaf.

10

Spoon some of the chicken mixture on top of the rice.

11

Wrap the banana leaf around the mixture securely by folding the sides and rolling it into a snug parcel.

12

Repeat the wrapping process for the remaining portions.

13

Serve the pastil with a wedge of lime or calamansi on the side for an added zest before eating.
