Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Thaw the puff pastry sheets according to the package instructions and set aside.
Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
Dice the chicken breast into small cubes and add it to the skillet. Cook for 5-7 minutes until fully cooked and lightly browned.
