Place the chicken breasts between two sheets of plastic wrap or in a large ziplock bag. Pound the chicken to about 1/4-inch thickness using a meat mallet or rolling pin.
Season both sides of the chicken breasts with salt and pepper.
Dredge the chicken in the flour, coating both sides, and shake off excess.
