  • 3 medium Potatoes, peeled and quartered
  • 1 cup Pitted green olives
  • 0.5 cup Raisins (optional)
  • 2 tbsp Chopped cilantro (for garnish)
  • Cooked white rice (for serving)

Season the chicken pieces with 1 teaspoon of salt and 1/2 teaspoon of black pepper on both sides.

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Brown the chicken in batches until golden on both sides, about 5 minutes per side. Remove the chicken and set aside.
